Weekend Meal: Baby Spinach Salad
Switch to a light springy salad to fit the season
After a hearty Easter meal, a simple salad is way overdue especially if your still eating leftovers. This baby spinach salad is great for your digestive system in helping to breakdown all of that ham and fixings.
The vinaigrette is medicinal in a sense, containing lemon juice and ginger. Lemon juice helps aid weight loss and is a digestive booster, while ginger sooths the intestinal track and eliminates gas.
BABY SPINACH SALAD tossed in a sweet lemon ginger vinaigrette
1 bag of baby spinach
1 teaspoon of grated ginger
The juice of 3 lemons
1 tablespoon of apple cider vinegar
1 teaspoon of sugar
1 cup of halved cherry Tomatoes
2 tablespoons of olive oil
- Take your spinach and give it a thorough rinse, but be careful not to bruise the spinach.
- Take your freshly squeezed lemon juice and put it in a mixing bowl. For an added zing, zest the left over lemon rinds into the bowl.
- Take the ginger and add that to a bowl with the vinegar, sugar, and olive oil.
- Whisk the mixture a couple times and add a couple table spoons to a salad bowl containing the spinach and cherry tomatoes.
- Toss and enjoy
