Soul food often gets a bad rap. Not only are soul food staples viewed as unhealthy, they’re also blamed for the high rates of diabetes, hypertension and obesity in the black community. Contrary to popular belief, however, a number of soul foods are actually loaded with nutrients, as chef Bryant Terry highlights in his book “Vegan Soul Kitchen.” This list of the most healthful soul foods outlines the health benefits of foods such as sweet potatoes and greens.
